Roasted Red Pepper Hummus Recipe

8 oz. roasted red peppers (not packed in oil)
1 (15 ounce) can chickpeas, rinsed and drained
1 (15 ounce) can white kidney beans, rinsed and drained
1/4 cup sesame paste (tahini)
2 garlic cloves, minced
2 tablespoons lemon juice
1 teaspoon ground cumin
Salt and freshly ground black pepper, to taste

Combine all ingredients in food processor or blender. Process until smooth. Season to taste with salt and pepper. Serve with toasted wedges of pita bread, vegetables, etc.

Makes 16 Servings
